Mackerel Fishcakes - Polpettine di Sgombro


These fishcakes are among my kids' favorite second dishes. They are very easy and quick to make. They can be served with green string beans or spinach as well as with a nice crispy salad. You can use Tuna in brine instead of Mackerel  for this recipe.
Queste polpette sono tra i secondi piatti preferiti dei miei figli. Sono molto facili e veloci da preparare.Sono ottimi serviti con fagolini o spinaci o anche con un'insalata mista. Si puo variare questa ricetta usando del tonno al naturale invece dello sgombro.

Ingredients for nine fishcakes ( 3 servings):
1 Tin of  Mackerel fillets in brine  ( net weight 125gr)
3 medium potatoes or 4 small potatoes
1 Egg
Salt
1 Spoonful grated parmesan cheese
1 Cup of toasted breadcrumbs.

Boil the potatoes and when ready leave to cool .
Strain the Mackerel fillets from the brine and with a fork crumble the fillets in a bowl.
Peel the potatoes and mesh together with the crumbled mackerel.
Beat the egg and add to the mixture, add some salt and the parmesan grated cheese.
Mix well.
Now form small balls with this mixture and roll each ball in the breadcrumbs.
Fry in hot frying oil till golden.
Let them dry on some kitchen paper towel to absorb the oil before serving.


Ingredienti ( Dose per 9 polpettine) per 3 persone:
1 scatoletta di Sgombro al naturale ( peso netto 125gr.)
3 patate medie o 4 piccole
1 uovo
sale
1 cucchiaio di formaggio Parmegiano grattugiato
1 tazza di pangrattato.

Lessate le patate e appena pronte lasciate raffredare.
Scolate i filetti di sgombro dall' acqua di conservazione e in una ciotola sciacciate con una forchetta.
Pelate le patate e sciacciate insieme allo sgombro.
Aggiungete il uovo sbattuto, salate e aggiungete il parmegiano.
Mescolate bene.
Formate delle piccole palline con questo impasto e passateli nel pangrattato.
Friggete le polpettine in olio caldo finche prendono un coloro dorato.
Fateli assciugare su un pezzo di carta cucina prima di servire.

They sound delicious. I may have to try them with tuna. I am not fond of mackerel but glad you used them in your recipe because I learnt a new word in italian :)
