What to do with ...


When my husband turned up with a bag full of green tomatoes I was quite surprised and asked him ... what am I going to do with them?

We fried some but there were too many and we could not eat fried tomatoes all the time so after a long search for recipies I finally found how to preserve them in jars and here is how we ( DH and I) made them.

To preserve a Kg of green tomatoes:

Ingredients:
1 kg green tomatoes.
1 onion
3 - 4 garlic cloves
origano
1 litre vinegar
White wine
Cooking salt
Olive oil.

Cut the tomatoes in slices, place them in a glass bowl , sprinkle cooking salt over and between the layers, leave to rest all night.

Next drain away all the liquid that has gathered in the bowl , drain very well.
Add the sliced onion and garlic and cover with the vinegar, leave for 24 hours.

After 24 hours, remove all the onion and garlic, drain away all the vinegar and rinse the tomatoes in white wine.

Put the slices of tomatoes in jars, sprinkle the layers with origano and slices of garlic and cover with olive oil. Leave the jars open for a day to make sure the oil settles down and if necessary add some more oil .You should have about 1 cm of oil over the tomatoes before closing the jars.
Store for 2 months before using.

These are just 2 of the 5 jars we made.



Quando mio marito è arrivato a casa con una borsa piena di pomodori verdi ero molto sorpresa e ho pensato... che cosa ci faccio?
Abbiamo mangiato alcuni fritti per qualche giorno ma erano tanti e non era possibile continuare a mangirli sempre fritti allora dopo una ricerca per ricette abbiamo deciso di conservarli sott'olio.
Ecco qui la ricetta:

Ingredienti:
1 Kg di pomodori verdi
1 cipolla
3 - 4 spicchi d'aglio
Origano
1 litro d'aceto
Vino bianco
Sale grosso
Olio extra vergine d'oliva q.b.

Tagliare i pomodori, porli in una terrina, cospargerli di sale e lasciare riposare da un paio d'ore a tutta la notte.

Togliere l'acqua di vegetazione, unire l'aglio e la cipolla a fette, versare l'aceto e lasciare in infusione per ventiquattro ore.

Eliminare gli aromi, scolare e sciaquare col vino i pomodori, disporli nei vasi, spolverando ogni strato con abbondante origano e fette d'aglio ( sedano e peperoncino secondo i gusti).

Coprire con l'olio, il cui livello dovrà superare quello dei pomodori di 1 cm. Lasciare aperti i vasi per un giorno per vedere che il livello dell'olio non si abbassa in questo caso aggiungere ancora un po' di olio. Chiuderli. Saranno pronti da gustare in un paio di mesi.

Nella foto si vedono 2 dei 5 vasetti che abbiamo fatto.

Hi Sue, Your recipe sounds good. I love fried green tomatoes. I have some green tomato recipes but I think they are all for fried or some type of pickles.

I have a ton of green tomatoes left over. I will have to try this! TFS!

I know that there is a few recipes to make a "mock" jam and jelly out of the tomatoes.
