A Summer Speciality - Caponata!


This dish is one of my favorites, it is a "must" in my home every Summer. It is a traditional Sicilian dish but my mum adopted it many years ago and like her many Maltese too, no doubt I am among those... so there's the Sicilian Caponata as well as the Maltese caponata which is a modified version of the original recipe. This dish is best served cold and can be kept in the refrigerator for a couple of days.
Here is the recipe I use ( my mum's version):

Caponata

Ingredients:
1 Onion
4 large peppers or capsicums (red and yellow)
1 large eggplant
5 large tomatoes
15 black olives
1 spoonful of capers
salt and pepper to taste.

Method:
Chop the onions and cook in 3 spoonfuls of olive oil.
Remove the seeds from inside the peppers (capsicums) and cut into cubes; add them to the onion and cook on medium heat.
You can add some hot water if necessary to avoid burning the vegetables.
Cut the eggplant in cubes and place apart in salted water for about 10 minutes.
After 10 minutes, or so, remove the eggplant from the water and squeeze out all the water.
Next add the eggplant to the onion and peppers and cook until all the vegetables are soft.
Clean the tomatoes from all the seeds inside and cut into pieces, add to the other ingredients.
Add salt and pepper, the olives and capers and cook for another 20 or 30 minutes on very low heat.
After this time remove from heat and set aside , allow to cool then refrigerate.

Note: This dish can be served with both meat or fish dishes as well as a topping on toasted bread.
It is similar to the french Ratatouille , the only difference is that here we use eggplant while the french recipe uses zucchini.


Questo piatto è uno dei miei preferiti, non manca mai in casa mia in Estate. E' un piatto tradizionale siciliano ma mia mamma l'ha sempre fatto e come lei tanti altri Maltesi... senza dubbio anche io sono tra questi... e così c'è la caponata siciliana e anche quella maltese che è una versione modificata della ricetta originale. Questo piatto è meglio servito freddo e si conserva in frigorifero per un paio di giorni.
Ecco la ricetta che uso (quella di mia mamma):

Caponata


Ingredienti:
1 cipolla

4 grossi peperoni (gialli e rossi)

1 grossa melenzana

5 pomodori grossi

15 olive nere

1 cucchiaio di capperi

sale e pepe


Affettate la cipolla e cuocete in 3 cucchiai di olio d'oliva in una padella grande.
Pulite i peperoni dai semini e tagliate a dadini, aggiungeteli alla cipolla e cuocete a fuoco medio.
Tagliate la melenzana a cubettini e metteteli in acqua salata per 10 minuti.

Trascorsi i 10 minuti togliete i cubettini dal acqua, strizzate bene e aggungeteli alla cipolla e i peperoni e cuocete fin che le verdure diventano morbidi.

Pulite i pomodori dai semi e tagliate a pezzetti ... aggiungete alle altre verdure.

Salare e pepare, aggiungete le olive nere e i capperi e cuocete il tutto per altri 20 o 30 minuti su fiamma bassa.

Trascorso il tempo di cottura, togliete dal fuoco, lasciate raffreddare e in fine conservare in frigorifero.


Nota:
Questo piatto è ottimo servito con carne o pesce ma è anche ottimo per condire le bruschette.

Questa ricetta è simile alla ricetta francese per il ratatouille, con la solo differenza che qui usiamo la melenzana mentre nella ratatouille si usano i zucchini.

I relish caponata..one thing I didn't know was the difference between ratatouille and our local recipe. My version is a mixture of the two. I love having the two veggies in my caponata.: ) Thanks for sharing your recipe.
