APPLE TART - CROSTATA DI MELE


I 've been baking again... this time it's Apple Tart.
Recipe:
250 gr. Flour
150 gr. Butter
100 gr. Sugar
2 Eggs
1 Lemon
Vanilla essence (optional)
5 Apples (Golden delicious)
200 gr. Apricot Jam
50 gr Demarara ( brown) sugar.

Sift the flour in a large bowl,make a well and add the softened butter in the centre and rub in, add the sugar, beaten eggs, the grated lemon grind and the vanilla essence. Mix and work till you have a firm smooth dough.
Roll into a ball and cover with cling film and leave to rest for about an hour in the refrigerator.

Line a baking pan with parchment paper and preheat oven to 375 °F .

Turn the dough onto a lightly floured board and roll out. With the rolling pin lift the dough and place it in the pan. With your fingers, lightly press the pastry into the sides of the pan. Using your fingers, gently press the pastry up to slightly build up the height of the pastry at the edges, trim the edges with a knife. Spread the dough with Apricot jam.
Peel and core the apples then cut in half and slice into the thickness you like.
Arrange the apples decoratively on the jam, overlapping them. Sprinkle the apple slices with lemon juice and demarara sugar.
Bake for 20 minutes or until the crust is cooked through and the apples are golden.

Eccomi di nuovo ai fornelli... questa volta ho fatto una crostata di mele.

Ricetta:
250 gr. Farina
150 gr. Burro
100 gr. zucchero
2 uova
Un limone
Una bustina di vanillina
5 mele Golden
200 gr. Marmellata di albicocche
50 gr. Zucchero di canna.

Versare la farina sulla spianatoia, formare un buco al centro e disporre il burro ammorbitito, lo zucchero, le uova la scorza di limone grattugiata e la vanillina, quindi lavorare l'impasto con le mani e conservare il panetto avvolto in pellicola trasparente in frigo per almeno un ora.

Con un mattarello stendere la pasta, adagiarla in una tortiera immburrata e infarinata, versare la marmellata di albicocche e distribuirla in modo uniforme sulla pasta.
Lavare e pelare le mele, dividerle a metà, tagliare a fette sottili, disporle a raggiera sulla marmellata di albicocche, spolverarle con lo zucchero di canna e qualche goccia di succo di limone. Cuocere in forno prescaldato a 200 gradi per 20 minuti o finche la pasta e le mele sono dorate.

Your pie has made me hungry. I will have to try it one day but not right now ... too much easter eggs and figolli still waiting to be eaten.
