A Summer Dish


I am sure you agree with me that Summer calls for salads and nice cold dishes to help us overcome the heat. Here is a very simple dish, ideal for Summer and that can be served as appetizer or main dish.

Lettuce wraps
Ingredients for 4 persons:
8 small lettuce leaves
150 gr. of lean ham
2 hard boiled eggs
2 spoonfuls of olive oil
1 teaspoon of mustard

Remove the shells from the hardboiled eggs . Cut the ham into very tiny pieces , I use a crescent knife for this, and put aside.
Wash the lettuce leaves and dry well with a paper kitchen towel, take care not to tear and ruin them.
Put the hard egg yolks in a bowl, add the oil and mustard and using a wooden spoon mix and blend until you get a creamy mixture. Now add the chopped ham pieces and blend well. Divide the mixture in 8 portions. Wrap each portion in the lettuce leaves, rolling the leaf to overlap. Place on a serving plate and sprinkle with the chopped egg whites.

I use the same mixture to fill the tiny pachino (cherry) tomatoes as you can see in the picture.

Sono sicura che siete d'accordo che l'estate richiede insalate e piatti freddi per combattere il caldo. Ecco un piatto molto semplice ideale per l'estate che puo essere servito come antipasto o per sostituire il primo .

Involtini di lattuga
Ingredienti per 4 persone:
8 piccole foglie di lattuga
150 gr di prosciutto cotto magro
2 uova sode
2 cucchiai di olio extravergine d'oliva
1 cucchiaino di senape

Sgusciate le uova sode . Lavate bene le foglie di lattuga, sgrondatele, asciugatele con carta da cucina facendo attenzione a non romperle. Mettete i tuorli sodi in una ciotola, unite l'olio e la senape e con un cucchiaio di legno , lavorateli a lungo finche avrete una crema omogenea. Unitevi il prosciutto trittato fine e amalgamate con cura. Dividete il composto in 8 parti e avvolgete ogni porzione in una foglia di lattuga, arrotondandola su se stessa. Sistematele su un piatto da portata, cospargetele con gli albumi tritati grossolanamente e servite.

Io uso lo stesso composto per riempire i pomodori pachino , come potete vedere nella foto.

Nice recipe Sue and and from the lovely picture they look delicious too. Yes with this hot weather salads make great refreshing meals...we had wraps today with cold meats, hard boiled eggs, sliced cheese, lettuce and tomatoes and mayo ~ yummy!

MMMMM I just love hard boiled egg recipes and this deserves to be tried out. so many thanks for sharing your recipe.
