SUNDAY SPECIAL DISH

This is one of my family's favourite Sunday special dishes. I admitt I don't like to prepare it often as it takes a long time to prepare , I'm more for quick dishes ... anyway the result is always a satisfaction especially when I receive compliments from my family. Here's the recipe I use.

Stuffed Pasta Shells

5oo gr. of pasta shells
800 gr. of cottage cheese (ricotta)
200 gr. of diced bacon.
2 eggs
2 cans or 700 gr. of tomato sauce
6 spoonfuls of Parmesan grated cheese.
1 or 2 mozzarella cheese ( or white sauce)
Salt.

Prepare a simple tomato sauce, I usually put the sauce in a pan, add some salt and a spoon of olive oil, bring to boil and cook for 10 minutes on a low flame.
Once the sauce is ready put it aside and leave to cool.
Now you can prepare the stuffing.
In a large bowl mix the cottage cheese, beaten eggs and diced bacon and sprinkle the mixture with some of the grated cheese, do not use all the cheese , you will need some later, you can add a pinch of salt but I prefer not to as the bacon is already salty. Mix well.
Cook the pasta shells in boiling water, cooking time should be shortened , remove from the flame before all the cooking time is lapsed, you need to have the shells intact to be able to handle and fill them with the mixture, they will continue to cook once more when you bake this dish.
Strain the shells from the water and put them under running cold water, this helps to cool them down for easier handling. Strain them well and start filling each shell with the mixture.
In your baking dish pour some tomato sauce and cover all the base, place the filled shells and cover them with tomato sauce , sprinkle the leftover grated Parmesan cheese all over the surface and cover again with slices of mozzarella cheese, you can use white sauce instead of the mozzarella .
Your dish is ready to be baked. Bake in a hot oven at 200° for 45 minutes.
