Russian Salad -- Insalata Russa

Hello, I hope you have all had a nice Easter. My Easter was nicely spent with my family and my in-laws, just as all other religious holidays. For Easter lunch my mother- in- law prepared a delicious lasagna and roastbeef and I made my usual  russian salad  , a dish (starter) we all love. This salad also known as Salade russe and Salade Olivier, finds its origin dating back to as far back as the 1860s. The chef who prepared this delicacy for the very first time was Lucien Olivier... the chef at the Hermitage restauant in Moscow. Here you can see a picture of my version of the dish.
There are many different versions of this recipe , you can find them on the web, but here is one that is very similar to my version. Even if this dish is generally used in the New Year, my family love it so much that I enjoy preparing it whenever there's a special celebration.

SOunds good! It seems like a "Potato salad" we make here for picnics and such. It's cooked potatoes, mayonnaise, mustard, green onions, and boiled eggs.

Sei dolcissima!!! Un baciottone...Iaia.
